Di Eropa kue kering dulu identik dengan kue sandingan para bangsawan. Sampai di tangan para bangsawan Eropa, bermula dari wilayah Spanyol saat penaklukan Muslim. Pendek kisah kue kering pun merebak di Eropa seperti Inggris dan Skotlandia, serta rakyat biasa pun turut menikmati, tidak hanya kaum kerajaan. Berikut ini dua contoh resep kue kering dari bahan kurma dan choco chips cookies.

 

Kue Kering dari Kurma

Bahan

 

2 butir telur

50 g gula kastor

1⁄2 sdt vanili bubuk 1⁄2 sdt garam halus 200 g tepung terigu

serbaguna

25 g tepung maizena

50 g bubuk cokelat

1⁄2 sdt baking powder

100 g mentega

100 g margarin

350 g kurma, buang bijinya,

cincang kasar

 

Cara membuat

1. Kocok telur, gula kastor, vanili, dan garam sampai gula larut, sisihkan.

2. Campur tepung terigu, tepung maizena, bubuk cokelat, dan baking powder. Tambahkan mentega dan margarin, aduk rata, buat lubang di tengahnya.

3. Tuang adonan telur ke tengah adonan, aduk rata. Masukkan kurma, aduk kembali hingga rata.

4. Ambil 1⁄2 sendok makan adonan, bulatkan dengan bantuan 2 buah sendok. Letakkan di atas loyang beralas kertas roti dan dioles margarin, tekan dengan punggung sendok sampai agak pipih.

5. Panggang kue dengan suhu 160°C sampai matang, keluarkan, dinginkan. Simpan dalam wadah kedap udara.

 

Choco Chips Cookies

100 g mentega

100 g margarin

80 g gula kastor

2 kuning telur

Ayak jadi satu

225 g tepung terigu

25 g tepung maizena

1 sdm susu bubuk full cream 100 g choco chips

 

Cara membuat

  1. Kocok mentega, margarin, dan gula kastor sampai lembut. Masukkan kuning telur satu per satu, kocok kembali sampai rata.
  2. Masukkan campuran tepung terigu, aduk rata. Tambahkan choco chips, aduk kembali hingga rata.
  3. Ambil satu sendok makan adonan, letakkan di atas loyang yang telah dialasi kertas roti dan diolesi margarin, tekan-tekan dengan punggung sendok.
  4. Panggang kue dengan oven yang sudah dipanaskan pada suhu 150°C sampai matang, keluarkan, dinginkan.
