Bagi penggemar acara Master Chef, nama Devina Hermawan tidaklah asing. Namanya juga sempat viral di Instagram dan publikasi media online, soal menu “ayam oncom”. Restoran bertema fusion food tumbuh di beberapa titik di Jakarta tentang bagaimana masakan Padang dikemas dengan gaya Jepang, dan beberapa kombinasi masakan lokal dengan metode memasak ala mancanegara misalnya. Masih dari laporan The Jakarta post, fusion food, berawal sekitar tahun 1970an. Konsepnya mengombinasikan racikan bumbu dengan metode memasak dari dua atau lebih dari beberapa wilayah atau negara.

Dalam menciptakan fusion food, diperlukan tiga tantangan berupa daya imajinasi, kreativitas, dan cita rasa. Pendek kata fusion food merupakan inovasi baru menghadirkan menu baru, campuran style cita rasa otentik lokal dengan masakan luar negeri, yang disajikan dengan gaya kekinian. Fusion food sudah jamak disajkan di cafe dan restoran modern di perkotaan.

Dalam buku Indonesia Fusion Foods, Devina bersama co-chef Jonathan Tjandra mencoba membagikan ragam resep fusion khas Indonesia. Buku ini berisi aneka resep inovasi baru untuk menikmati cara baru paduan masakan otentik nusantara dengan menu modern yang biasa tersaji di restoran atau cafe milennial.

Bahan

250 g tempe

3 siung bawang merah, haluskan

3 siung bawang putih, haluskan

1 sdt bubuk ketumbar

1 sdt garam

1 sdt merica

3 sdm air

3 sdm terigu

3 sdm tepung beras

Minyak untuk menggoreng

Rawit mayonnaise ( lihat resep halaman …)

Cara membuat

  • Potong-potong tempe seperti french fries, sisihkan.
  • Campur bawang merah, bawang putih, bubuk ketumbar, garam, merica, dan air, aduk rata. Satukan bumbu dengan tempe, aduk kembali sampai rata.
  • Ayak terigu dan tepung beras ke dalam tempe, aduk perlahan sampai melekat ke tempe.
  • Panaskan minyak secukupnya, goreng tempe sampai kuning kecokelatan, angkat.

Ada juga menu dengan nama Duck Tacos With Sambal Matah. Sajian suwiran daging bebek betutu di atas tortila. Nah, dalam bab ini, sekitar ada 13 resep menu appetizer yang disajikan dengan gaya milenial ini.
