Di mana pun, pada Hari Raya, baik Idul Fitri maupun Idul Adha selalu dirayakan dengan penuh suka cita. Setiap orang dan komponen keluarga memaksakan diri untuk membeli berbagai kebutuhan untuk hari raya tersebut. Misalnya, pakaian, makanan, dan berupa hadiah-hadiah. Tidak ketinggalan, daging menjadi salah satu menu istimewa pada hari raya ini.

Khususnya, pada Hari Raya Idul Adha atau Hari Raya Qurban dengan banyaknya orang yang berqurban, baik kambing, sapi, maupun kerbau. Pada hari-hari ini konsumsi daging meningkat. Tidak hanya dialami oleh orang yang berkecukupan, masyarakat miskin pun ikut mendapatkan konsumsi daging ini, yaitu dari jatah pemberian hewan qurban.

Mengingat hal di atas maka dibutuhkannya pengetahuan tentang teknik menyimpan dan mengolah daging. Sebab, setiap daging memiliki perlakuan yang berbeda sesuai jenis dan karakternya. Maka, sekadar pengetahuan, kami memberikan beberapa tips bagaimana menyimpan, memilih, dan mengolah daging secara garis besar yang kami kutip dari berbagai sumber. Yaitu sebagai berikut.

I. Tips memasak daging berkuah:
Beberapa kunci penting dalam memasak daging2an berkuah:

  1. Pastikan daging dan bumbu dimasak secara bersamaan sejak awal. Hal ini akan membuat bumbu meresap sempurna ke dalam daging, cita rasa bumbu dan kuah yang dihasilkan pun akan semakin matang sempurna.
  2. Gunakan api kecil, untuk mendapatkan kaldu yang sempurna dan tekstur daging yang lembut. Hindari penggunaan api sedang dan besar, sebab akan menjadikan kaldu berwarna buram dan cita rasa yang hambar serta tekstur daging yang kering.
  3. Apabila menggunakan panci tekan/presto (pressure cooker) boleh menggunakan api yang sedang, sebab proses pemasakannya memanfaatkan sistem tekanan uap panas sehingga mampu mengeluarkan sari-sari daging dari “sarangnya”.
  4. Untuk beberapa jenis masakan, seperti soto, pindang, dan rawon, apabila diinapkan selama satu malam akan dihasilkan paduan kaldu dan bumbu dengan cita rasa terbaik.
  5. Karena daging kambing lebih tinggi dalam menyerap rempah dibandingkan daging sapi. Maka, lebihkan takaran rempah 25-40% jika memasak daging kambing.
  6. Usahakan untuk mencampur daging dengan minimal 30% daging bertulang pada masakan berkuah untuk mendapatkan kaldu yang banyak sekaligus meningkatkan penampilan agar lebih menantang selera.

II. Tips memilih daging ayam:

  1. Pilih daging ayam yang keadaannya masih segar.
  2. Pilih yang baunya masih normal, yaitu tidak busuk atau menyengat.
  3. Pilih yang tidak mengalami perubahan warna. Yang normal biasanya berwarna putih kekuningan. Daging ayam yang berwarna agak kemerahan umumnya disebabkan karena si ayam sudah mati sebelum dipotong. Sedangkan daging ayam yang berwarna kuning menunjukkan kurang sempurnanya pemanasan saat membersihkan bulu, sehingga kulit arinya tidak terkelupas.
  4. Pilih yang tidak terlihat ada tanda memar.

III. Tips penyimpanan daging ayam

  1. Bersihkan daging dari bulu-bulu yang masih melekat.
  2. Cucilah daging hingga bersih sebelum disimpan.
  3. Bungkus daging ayam dengan kemasan plastik atau tray foam serapat mungkin untuk mencegah terjadinya dehidrasi pada waktu penyimpanan.
  4. Penyimpanan dapat dilakukan di dalam lemari es dengan temperatur 2-4 derajat celsius, maka daging mampu bertahan selama 2-3 hari.

IV. Tips mengenali ciri daging gelonggongan:

  1. Warnanya pucat (daging yang masih baik berwarna merah terang dan lemaknya berwarna kekuningan)
  2. Kandungan air sangat tinggi/lebih berair/lembek.
  3. Kondisinya agak rapuh sehingga tidak bisa dijadikan sejumlah produk olahan, seperti bakso.
  4. Diletakkan di meja (tidak digantung). Sebab, apabila digantung akan meneteskan air.
  5. Biasanya harganya lebih murah di bawah harga standar.
  6. Lebih cepat busuk, sebab lebih mudah berkembangbiaknya mikro organisme.

V. Tips membeli daging:

  1. Daging yang baik warnanya merah terang dan lemaknya berwarna kuning.
  2. Pilihlah daging yang masih jelas pada bagian tubuh hewan tertentu, seperti bagian paha, iga, atau sengkel sehingga tidak ragu bahwa daging yang dibeli itu bukan daging campuran. 
  3. Hindari daging campuran yang sudah tidak dapat diidentifikasi karena daging oplosan biasanya terdiri dari berbagai bagian tubuh hewan yang sudah dipotong-potong kecil sehingga tidak terlihat jelas bagian daging apa yang ditawarkan oleh penjual.

VI. Tips menyimpan daging di freezer:

  1. Daging harus dalam kondisi segar berwarna merah.
  2. Bungkus daging dengan kemasan plastik tebal, dikemas rapat agar daging tidak mengalami dehidrasi. Daging yang dehidrasi akan mengalami perubahan warna menjadi cokelat kehitaman, akan terjadi penyimpangan rasa apabila diolah, dan alot.
  3. Apabila hendak digunakan, cairkan (thawing) daging. Ada 3 cara pencairan, yaitu di pindahkan ke chiller selama 12-24 jam, dibiarkan dalam temperatur ruang, dan letakkan di wastafel sambil dikucuri air keran.
  4. Daging yang sudah di-thawing tidak bisa dikembalikan ke freezer karena bakteri yang semula tertidur lelap bangun kembali dan mulai merusak daging. Sebaiknya daging segera diolah habis, kalaupun mau disimpan masukkan ke chiller, itu pun hanya bertahan 2 hari saja.
