Gulai  ‘cencang’ atau ‘cincang’ adalah masakan khas dari Sumatera Barat. Masakan ini dinamai demikian karena, daging untuk membuat gulai ini sengaja di cincang atau dipotong kecil-kecil supaya lekas empuk. Masakan ini bisa dibuat dari daging sapi, kambing atau daging ayam. Bila memakai daging kambing, tambahkan bumbu rempah supaya aroma dagingnya tidak terlalu tajam.

Bila memakai daging kambing, tambahkan bumbu rempah supaya aroma dagingnya tidak terlalu tajam.

Bahan
500 g daging tetelan sapi, potong kecil-kecil/cincang kasar
Haluskan
10 butir bawang merah
3 siung bawang putih
½ sdt merica
2 sdt ketumbar
¼ sdt adas
¼ sdt jinten
1 sdt terasi matang
Garam secukupnya
400 ml santan cair
5 butir cengkih
3 butir kapulaga
3 cm kayu manis
½ biji pala
3 cm jahe, memarkan
2 batanng serai, memarkan
2 lembar daun salam
5 lembar daun jeruk
1 lembar daun kunyit, cipul
300 ml santan kental

Cara membuat
1.    Aduk potongan daging bersama bumbu halus. Diamkan selama 20 menit.
2.    Satukan dengansantan cair, cengkih, kapulaga, kayumanis, dan biji pala. Masak sampai mendidih. Tambahkan jahe, serai, daun salam, daunjeruk, dan daun kunyit. Aduk sampai mendidih kembali.
3.    Tuang santan kental, aduk rata. Masak dengan api kecil sampai daging empuk dan kuah kental. Angkat.
