Sirup

250 g gula pasir

250 ml air

1 helai daun pandan

6 helai daun jeruk

15 g tepung beras

250 g tepung tapioka

400 ml santan encer

Garam secukupnya

Pewarna kue pelangi (merah, jingga, kuning, hijau, dan biru)

Cara Membuat

  • Satukan semua bahan sirup dalam panci, masak sampai gula larut. Matikan api, biarkan dingin.
  • Satukan tepung beras dan tepung tapioka dalam sebuah wadah. Tuang santan sedikit demi sedikit, aduk sampai menjadi adonan yang sedang kentalnya. Tambahkan sirup, aduk kembali sampai rata.
  • Bagi adonan menjadi lima sama banyak, masing-masing diberi warna berbeda. Aduk adonan sampai rata.
  • Siapkan loyang ukuran 10 x 20 cm, oles dengan minyak. Panaskan dalam dandang sebentar. Tuang adonan pertama ke dalam loyang, kukus sampai mulai matang. Tuang adonan kedua ke dalam loyang, kukus kembali sampai mulai matang. Lakukan berulang untuk adonan ketiga dan seterusnya.
  • Kukus kue kembali selama 20 menit supaya matanya sempurna. Potong-potong setelah kue dingin.
